"What is a truly easy-to-use knife?" The answer we arrived at while doing our daily kitchen work was not an all-purpose knife, but one that was optimal. We found it in a compact knife that feels natural in your hand, manoeuvres easily, and cleans up quickly. Small isn't inherently better; small means it fits seamlessly into your daily routine. This knife was created by focusing on what truly matters in our everyday cooking.

Before Use
- Before first use, wash thoroughly with neutral dish detergent using a soft sponge, rinse well, then wipe completely dry with a dry cloth.
- Check for blade chips, handle looseness, or other defects before use.
During Use
- Be careful not to injure hands or fingers with the blade edge.
- Do not touch the blade edge directly with bare hands.
- Use only for cooking purposes.
- Cutting frozen foods or hard objects like bones may cause blade chips, breaks, bends, cracks, or handle looseness. Use specialized knives for such tasks.
- The blade edge is honed extremely thin. Avoid using with lateral force or impact as this may cause damage.
- Stop using if damaged or deformed.
- When children use this knife, always supervise to prevent injury.
- Do not use on hard surfaces like metal or stone.
- Do not heat the blade directly with fire or apply heat, as this may cause handle looseness or reduced sharpness.
- Do not leave soaking in water for extended periods.
After Use
- Wash thoroughly with neutral dish detergent using a soft sponge, rinse well, then wipe completely dry with a dry cloth.
- When cutting foods high in salt or acid like pickles or lemons, wash especially thoroughly.
- Avoid using steel wool or rough-surfaced sponges.
- Avoid dishwashers, dish dryers, microwaves, and ovens as they may cause deformation, rust, or discoloration.
- As the handle uses natural wood, do not soak after use - wash promptly, remove moisture, and air dry naturally.
- If surface roughness or color changes are bothersome, wiping with plant oils like walnut oil or grapeseed oil applied to cloth will restore natural luster.
- Regular maintenance is recommended.
- Store in a well-ventilated area out of children's reach.
- Even initially sharp blades gradually lose sharpness with use. Sharpening with a whetstone about 1-2 times monthly will maintain cutting performance.
Important Notes
- The handle uses natural wood. Wood grain and color vary among individual pieces. Aging and deterioration from use will occur, but please understand this as natural wood's character and charm.

Perfect size between Santoku and Petty
The blade length of the optimal knife is 145mm. It is slightly smaller than a typical Santoku knife and a little larger than a Petty knife. Some may think it is small, but with a blade length of this size, it is large enough to shred half a head of cabbage. In this day and age when tasks such as filleting fish or cutting large chunks of meat are not done on a daily basis, Nakagawa believes that this size is "ideal for everyday use."

Sharp cutting edge that can slice tomatoes thinly
What supports the comfortable feel is the sharpness that you would never imagine from its compact appearance. Sumikama, a company that has been making knives for over 100 years in Seki, Gifu Prefecture, known as the city of cutlery, has developed a new sharpening method called "ZERO EDGE" to make the edge of the blade as thin as possible, at 0.15 to 0.2 mm, resulting in a sharpness that is so thin that you can see through a tomato.

Graceful design that feels natural in hand
While maintaining authentic performance, we sought to create a design that felt graceful rather than imposing. The handle features beautiful black cherry wood with its distinctive grain, finished with the same wood coating used for wooden tableware and cutlery. This protective finish strengthens the wood and provides water resistance, allowing you to use your wooden-handled cookware with complete confidence.
